Peanut Butter Pancakes

Sliding into vacation mode by sleeping in, making peanut butter pancakes and ordering new stock for the HepCat Store. The recipe for the peanut butter pancakes is from Color Me Vegan, possibly one of the best cookbooks I own. I added chocolate chips and bananas and served them with vanilla ice cream. Yum!

Swedish Apple Pancake

I tried a classic recipe from my beloved vintage cookbook today. Swedish pancake with apples - baked in the oven. This is a version of a classic Swedish oven pancake - the one that is often made with bacon and eaten with lingonberry jam.

My maternal grandmother made oven pancake on quite a few occasions. This was my first attempt at cooking one and I'm really pleased with the result. You know you've done it right when the taste reminds you of your childhood.
I served it with lingonberry jam.


 Apples - peeled and sliced. I put some cinnamon on top.

 Pancake batter. 3 eggs, milk, flour, sugar and salt.

Then I poured the batter over the apples...
